I can't figure out how to change the information in the header such as subscribe email to equal the real email address. What page do I edit. I can't find the email anywhere to edit. HELP!

In the header settings within the theme options page, there is a text field where you can enter the feedburner URL (or other) that will link from the Email text link. You don't put an email address in there, you put the link to the third party subscription service (such as feedburner).
